Fish Taco Bowls are a favorite around here. They are so easy to make. They taste different every time depending on what ingredients you have in your fridge/pantry. You can substitute any meats and veggies that you want and add any of your favorite taco toppings. Enjoy!
2-4 fish fillets (we used catfish)
any taco toppings you like!
Start by cooking your fish. I bought a bag of frozen catfish to use. My seasoning blend of choice is salt, pepper, paprika, oregano, parsley. Season both sides of fish and place in foil lined pan. Mix 1-2 tbsp melted butter, fresh lemon juice, and 1 tbsp minced garlic. Pour mixture over fish and bake at 400 for 20-30 minutes, or until fish is done.
While fish is cooking, get your salad ingredients together. Tonight, I used lettuce, salsa, avocado, and black beans. Once the fish is done, shred with a fork and add into your bowl of salad goodness. Eat up!
