I love green vegetables. I didn’t always. I spent all of my childhood refusing to eat them. I didn’t start expanding my food horizons until college.
I don’t really remember when my vegetable excursion started. Perhaps at a Mardi Gras ball in Baton Rouge? I believe asparagus and Cane’s sauce were involved. And I conquered my fear of green food.
Before I met Ryan, I ate canned green beans. And there’s nothing wrong with canned green beans. Until you eat fresh green beans. I introduced Ryan to many new foods when we started dating, but he changed my life with fresh green beans.
Fastforward to tonight. I had cabbage rolls already made and in the oven. Which left me time to focus on the side dish. Y’all. I loved these green beans so much. Like, I went all Pioneer Woman and took a pic of the “cast of characters.” (PDub was my first blog love and the reason I started blogging, btw. It’s only right that I do this in honor of her.)
A bag of steamfresh green beans. How easy is that? No snapping of ends involved. Let’s be honest, no one likes that part.
So, throw your beans in the microwave and cook according to package directions. Once they are done, melt 1-2 Tbsp butter in a skillet. Add garlic and cook for about a minute. Then, add the green beans and stir to make sure they are coated in the buttery garlic goodness. Squeeze some fresh lemon juice on top and season with salt and pepper. Let them cook while stirring occasionally for about 5 minutes. Then eat these delicious vegetables absolutely bursting with flavor. With cabbage rolls or chicken or steak or fish or more green beans. Whatever tickles your fancy.
I should probably tell you now I’m obsessed with lemon juice, which may be why I think these are the best green beans ever. A post for another day…
